Health: Eat this, not that! Raw or cooked?

Cooking certain vegetables makes many of their nutrients more accessible for your body to use—not to mention, they can be a little tastier and easier to digest. So, which ones should you be cooking? Consider turning up the heat on these 12 veggies that are more nutritious when cooked.

Tomatoes, Asparagus, Spinach, Mushrooms, Celery, Carrots, Green Beans, Kale, Eggplant, Brussel Sprouts, Potatoes, Artichokes.....

I suggest eating them both ways! I need to eat more of these.

Love most of them.  Kale, eggplant and artichokes don't appeal to me as much.  Used to eat raw potatoes when I was younger, I cook all my vegetables now.

Wow. Never thought of eating a raw potato. Is it good? Probably very good for your teeth.
