What's for dinner?

It's a rainy, windy, miserable day so I made a huge pot of potato/cheese/onion soup. I'm going to pick up some fresh crusty bread at the bakery on my way back from picking up the kids. 

I would like to make something for dessert but not sure what. I have pastry, blueberries and strawberries I would like to use up. I also have a couple of oranges and some over ripe bananas.

If someone could come here and bake it that would be awesome. And clean up to...k, thanks.

Don't know if this is a daily dinner thread, where members post what they had or are having for dinner?

Today hubby and I just munched on leftovers... either a sub sandwich, brats, or hot dogs, and hubby's making Nachos. Also having some Halloween cookies and some of my favorite candy bars. I love it when I don't have to cook a regular dinner, and just get to munch on some junk food. It's all good!!

Leftover Eggplant Parm.

I've been making it for years but I've never been totally satisfied.
Either it was too greasy, heavy or both.

I tried a few new ideas.

I sliced the eggplant thicker than usual, 1/2 inch slices, which required less breading and let the taste of the eggplant come through.

Instead of a three step breading process, I  whisked the eggs with the flour (Wondra, it's lighter than AP) and then coated the slices with bread crumbs.

I used a very heavy cast iron pan for frying and didn't have to add any extra oil, and I drained the slices on racks instead of paper towels.

I was very pleased with the results.

Tonight we'll see if the dish reheats well

Yummmy coleslaw with celery seed dressing! Not enough ppl make it like that!
I no longer eat pork, but I use to love pulled pork. Easter today & I bought a tiny turkey ham lol. Should prove interesting smh.

The turkey ham we had on Easter came out alright. I seriously doctored it with maple, brown sugar, pineapple, etc. Good enough lol.

Tonight
Coconut lime chicken
Asparagus
Coconut joejoes with siracha mayo dipping sauce.


I will not kneel before Zod.

Hi Domestic Goddess!

We had left over baked chicken and a garden salad, with warm dinner rolls....very easy...Oh and chocolate pudding for desert

Sam, we did have fun! We also had a celebration. Our son-in-law passed his flight test and got his pilot's license.
