I make this every summer holiday, because it is simple, light & refreshing. It's a hit with most ppl. Over the years I have realized how different other ppl make this salad. Some use buttermilk, some use mayo, while others use yogurt or sour cream. For me using yogurt just makes Tzatziki which is more of a sauce or dip.
2 cucumbers peeled & sliced paper thin
One large onion peeled & sliced paper thin
Small Lowfat Sour cream
Quart Lowfat Buttermilk
Sugar, salt & pepper to taste.
Refrigerate overnight to allow flavors to meld together.
Wisk Buttermilk & sour cream together until well blended. No lumps!
Add 2tsp of sugar(more if you like a sweeter version)
Add cukes & onion & mix well
Salt & pepper to taste. I eat healthy, but this is one recipe you need a good portion of salt & I use it. I recommend adding it slowly while tasting as you go along. Test the next morning & add any additional sugar or salt if needed.

I love this salad! So yummy on a hot Summer day!
I have never used yogurt though, we use sour cream. But my family loves healthy eating so I am going to try the yogurt version.

Sounds wonderful! Love cukes as long as the skin is off. Would you use a Vidalia onion? Red? Yellow?

I use yellow onions, but I think any of them would work.
