That looks and sounds delicious. I'm not really a pie person but I can make an apple pie. Did you use Macintosh apples? I have a ton of those from my neighbour and I have already made apple crumble and apple crepes. I could pick up some pears on the Parkway today. Hmmmm....I think I might have to try it!

I like more of a tart app!e for pies, especially when using pears with it. Locally grown granny smiths are my fav for pie, but if not available I use another locally grown apple & add extra lemon juice to the filling. I make my friend an apple pie every fall & she prefers a sweeter pie, so I use McIntosh & omit the lemon. I also use a bit more brown sugar in all my apple recipes because I love it when it carmalizes on the crust! Yummy!

Hmmm. Ok that helps. I have granny smith too but I like to eat those with cheddar for lunch. Not sure I want to share them.
I had great success with strawberry rhubarb pies this year! I had so much rhubarb I couldn't use it all and no one else seems to like it. I grew up chomping on it and dipping it in honey for a treat and I still love it today. I wonder if I could use it with apple in some way. Otherwise I'm going to have to throw it all out.

You can use rhubarb with pears or apples. Perfect for a tartness in pies! I would prefer rhubarb over lemon, but was unable to find any this year.
