Growing up in a Catholic home we not only didn't eat meat on Fridays during Lent, but Wednesdays too.
This recipes is both easy and versatile.
When my mother couldn't find catfish, she would sustitude cod or some other firm fish.
Ingredients
1 cup yellow cornmeal
1/3 cup all-purpose flour
1 1/4 teaspoons ground red pepper
1/2 teaspoon garlic powder
2 1/2 teaspoons salt
12 catfish fillets (about 3 3/4 pounds)
Vegetable oil
Preparation
Combine first 4 ingredients and 2 teaspoons salt in a large shallow dish.
Sprinkle catfish fillets evenly with remaining 1/2 teaspoon salt, and dredge in cornmeal mixture, coating evenly.
Pour vegetable oil to a depth of 2 inches into a Dutch oven; heat to 350°.
Fry fillets, in batches, 5 to 6 minutes or until golden; drain on paper towels.
Enjoy.

I agree with almost all of the directions, but I have a bonus trick that you might like to try. Line a clean brown paper bag with a few sheets of newspaper, top that with your paper towels and set your hot fish filets in the bag to drain, closing the bag will keep them warm while waiting for the next batch to come out of the fryer. It's a sharp way to serve the whole meal hot without over cooking the fish.
