I got a late start this year, so I had to adjust my cookie menu. I was going to make homemade girl scout thin mints, but that is a lot of time. Instead I am making a simple mint Oreo truffle.
8oz cream cheese softened
15oz package of any flavored Oreo.
Top grade melting chocolate.
Wilson's green candy melts
Process oreos to a fine crumble.
Mix Oreo crumble with softened cream cheese.
Shape mixture into balls & set on cookie tray
Put in freezer for one hour.
Melt chocolate
Dip chilled balls into chocolate using a fork.
Set on wax or parchment paper to cool
Once chocolate has hardened melt green melts
Drizzle over truffles.
Since I used mint & peppermint oreos I used the green melts & crushed candy canes. Depending on Oreo flavor you can top the truffles with anything you wish. Nuts, chopped dried fruit, m&ms, sprinkles, nonpareils, etc.
Anyone have any quick recipes to share?
I also made my favs chocolate chip & kolaches. The kolaches took way too much time, but so worth it!

I forgot to mention that you should not use chocolate chips for dipping. This is one recipe that should only have real melting chocolate. Jmo, but tried & true lol.
